Properties: yellowish brown or almost white powder. Extracted from Aspergillus oryzae. Temperature range 55-100. Under the condition of high temperature, the enzyme can hydrolyze the refined α - 1,4 glucosidic bond of starch molecule rapidly, cut off the short bond dextrins and a small amount of oligosaccharides randomly from the inside of starch molecule, so as to reduce the viscosity of starch slurry rapidly. The liquefaction time is prolonged, and a small amount of glucose and maltose will be produced
