Properties: white to almost white yellow powder, extracted by Aspergillus niger. Molecular weight: 150kda (about 80kDa in SDS-PAGE, isoelectric point 4.6). An oxidoreductase that oxidizes glucose to gluconic acid. The enzyme requires flavin adenine dinucleotide (FAD) as coenzyme, and each molecule contains two fads. Soluble in water. Chemical substances EDTA, KCN and NaF did not affect the enzyme activity, but the enzyme activity was affected by HgCl (mercuric chloride), AgCl (silver chloride) and p-mercuric chloride benzoic acid, which reduced the enzyme activity

Beverage, juice, can and dry food are used to deoxidize and prolong the storage period. It can also be used with catalase for food antisepsis and sterilization and enzyme analysis of grape.
