The lipoxygenase crystallized from soybean has an isoelectric point of 5.4. The optimum pH cannot be simply determined, but is determined by the solubility of the substrate. Generally, the pH is 6.0-3.0, and the optimum temperature is between 20 and 30°C.
Uses: Biochemical research. Lipoxygenase can catalyze molecular oxygen to oxidize fats and oils with 1,4 double bonds to form hydroperoxides. Hydroperoxide oxidizes the sulfhydryl group (-SH) of protein molecules to form disulfide bonds (-S-S-) and can induce the polymerization of protein molecules, making the protein molecules larger. Lipoxygenase can break the double bond structure of carrots through coupling reaction, thereby bleaching and improving color
