Activity definition: The amount of enzyme that catalyzes the hydrolysis of pectin to produce 1 μ g of galacturonic acid per hour in 1 gram of enzyme powder or 1ml of enzyme solution at 50℃ and PH3.5 is regarded as 1 enzyme activity unit
The temperature range for enzyme action is 30-60℃, with the optimal range being 45-55℃. If the temperature exceeds 65℃, the enzyme will rapidly become inactive.
The operating PH value is 3.0-6.0, with the optimal PH being 3.5-4.5.
Moisture content: < 8.0%
Properties (for reference only) : Yellowish-brown to light brown powder. It is refined through deep liquid fermentation with Aspergillus Niger and is a highly active enzyme for dissolving pectin
