Properties: White to off-white yellow powder, extracted from Aspergillus Niger. Molecular weight: 150KDa (approximately 80KDa in SDS-PAGE, isoelectric point 4.6). An oxidoreductase capable of oxidizing glucose to gluconic acid. This enzyme requires flavin adenine dinucleotide (FAD) as a coenzyme, and each molecule contains two Fads. It is highly soluble in water and completely insoluble in organic solvents such as ether, chloroform, butanol, pyridine, glycerol and ethylene glycol. 50% acetone and 66% methanol can cause it to precipitate. Chemical substances such as EDTA, KCN, and NaF do not affect the enzyme activity, but the enzyme activity is reduced due to the influence of HgCL (mercury chloride), AgCL (silver chloride), phenylhydrazine, p-chloromeric benzoic acid, etc
Usage: Biochemical research. This enzyme shows high specificity for β -D-glucose. In the food industry, it is used for de-sugar in egg processing to prevent Browning. It is used for deoxidation in beverages, fruit juices, canned foods and dried foods to extend the shelf life. It can also be used in combination with catalase for food preservation and disinfection, as well as for grapevine analysis, etc. It is used in medicine as a reagent for urine sugar and blood glucose.
