It should wear appropriate protective clothing and gloves when used in large quantities. It is mainly used as polymerization inhibitor. It is also commonly used for in vitro antioxidant evaluation of antioxidant components. DPPH method: DPPH method was proposed in 1958 and is widely used for quantitative determination of biological samples, classified substances and food Antioxidant capacity. DPPH is a stable free radical in organic solvents. Its alcohol solution is purple and needs to be stored away from light at low temperature. It has a single electron, so it can accept one electron or hydrogen ion and has the maximum absorption at 517nm. In the presence of free radical scavenger, the single electron of DPPH is captured to lighten its color. The absorbance value at the maximum light absorption wavelength decreases, and the degree of decline is linear. The decrease of absorbance level indicates the increase of antioxidant capacity, so as to evaluate the antioxidant capacity of the test sample. This antioxidant capacity is expressed by inhibition rate. The greater the inhibition rate, the stronger the antioxidant capacity.
