Catechin is the general name of polyhydroxyflavane-3-phenol, but sometimes it refers to (+) catechin. It is widely distributed in the plant kingdom and exists in large quantities with tannins in the bark of Acacia catechu and gambir. The effect of tannin is very weak, but it is easy to coincide to form tannin through heating and acid treatment. Positions 2 and 3 have non corresponding isomers because they contain irregular carbon atoms.

There are two chiral (see chiral) carbon atoms in the molecule of catechin, so there are four stereoisomers: (+) - catechin, (-) - catechin, (+) - epicatechin, (-) - epicatechin.

Catechins are mainly divided into four kinds: 1 epicatechin (EC); 2 Epigallocatechin (EGC); 3 Epicatechin gallate (ECG); 4 Epigallocatechin gallate (EGCG)
